Coffee Popsicles

IMG_3611In case I’ve not been clear in the past on how much I am not a morning person, let me just reiterate it. I am not a morning person. (Can you feel the bitterness through my words? ha!) I’m the one who it takes about 2 hours and a cup of coffee later for my body to wake up even after it’s awake. On top of being the normal lazy morning lounger, I am really dragging my feet today since last night was the epitome of lack of sleep. My three year old, Lyla, was not feeling well and got a fever late in the evening. She was surprisingly very sweet and calm regardless of the fact she was sick but she no doubt had a restless night of sleep as did we. My husband and I were up on and off throughout the night with her trying to comfort her but my husband has no problem rolling over seconds later and snoozing away. However, I struggle with once I’m awoken it’s hard for me to return back to sleep so after multiple times of being up and dozing off my body finally found it’s wake up call at 4 AM and never to return back to sleep. My bags and dark circles under my eyes have their own story to tell of the lack of sleep and my zombie mom look is beyond prominent on my face. Coffee is and will be my best friend today. Don’t doubt that I’ll intake at least one cup if not more. I apparently had too much time on my hands this morning though once everyone went back to sleep and whipped up some coffee popsicles. Now I can sip my coffee, have breakfast and if I’m crashing in the afternoon, I can slurp down a coffee popsicle. (As if I wasn’t already a true addict, right?) Check out how basic they are to make….

COFFEE POPSICLES 

Recipe serves: 4

Ingredients:

  • 1 cup coffee (with cream and sugar already mixed in if desired)
  • 1/2 cup creamer (for bottom of the molds)

Instructions: 

  1. Poor a little of the creamer into the bottom of each mold just about 1/4 inch high.
  2. Freeze the mold until the cream is solid. Approximately 1 hour.
  3. Make coffee as normal, mixing cream and sugar in if desired. (You will need at least 1 cup of coffee possibly more depending on size of the popsicle mold.)
  4. Refrigerate until chilled.
  5. Pour the chilled coffee mixture into each mold onto the frozen creamer, filling it to the top.
  6. Apply lids and let chill for approximately 3 hours.
  7. **Once frozen, you may have to run the bottom of the mold under warm water for 15 seconds to loosen the popsicle enough to remove.

I’m crossing my fingers that a combo of my normal coffee intake plus these amazing coffee popsicles will kick me into high speed today. Their delicious regardless and a perfect summer treat to cool you off!
